Oatmeal Raisin Baby Sticks

12 Mar

I haven’t been able to sit down and post much in the past couple of weeks. I’ve been a busy bee getting things ready for Adrian’s first birthday party this weekend (I can’t even believe he is about to be 1!)

It rained a few times last week,  and since  me and the little man were hanging out indoors for a bit I decided to make him a special treat!

Oatmeal Raisin Sticks!

The original recipe I got from All Recipes and made a couple of kid friendly adjustments to it.

Here is my revised kid friendly version!

  • 1/2 cup butter, softened
  • 2  ripe bananas
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup All Purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups quick cooking oats
  • 2 packs of raisins chopped

1. Cream butter, banana, vanilla extract and butter together.

2. Combine wet and dry ingredients.

3. Spoon log shapes or cookies shapes on a parchment lined cookie sheet and bake at 375 for about 20 minutes.

Honestly, I believe you could also omit the butter and they would still hold together and be even healthier.

I rolled them in log shapes kind of like a teething cookie and even though he only has two teeth I give him the entire cookie, they melt right in his mouth!

He absolutely LOVES them.

Nom Nom Nom 🙂

Love Quotes on Pillows #1

6 Feb

Today, I revamped some of my old, shabby throw pillows with some dazzling glitter and mod podge.

(I swear you can do anything with mod podge)
Pillow revamp

With a little of my trial and error out of the way – follow these steps and you will have bedazzled pillows in no time!

Lay flat and outline

Step 1: Print out your words or quote of choice in large, bold font.

(otherwise it will be hard to decipher the words through the glitter)

Make sure it’s lined up how you want it on the pillow and tape down on the edges if necessary.

My all time favorite love quote is Jane Bennet’s answer to Mr.Bingley’s proposal in Pride and Prejudice

 “Yes,  a thousand times Yes”

(Heart flutter)

Step 2:  Use a fine point pen and outline your letters. Press down hard, in fact, you want to puncture the paper a little bit. Then go over your pen marks with a sharpie. Depending on the fabric you might need to go over your outline a couple of times.

(Make sure you place a piece of paper inside the pillow case to protect the other side!)

Step 3: Remove your stencil to reveal the indention in the fabric, and there will also be some sharpie points to guide your next step.  Again, depending on your fabric choice, you may need more of a sharpie outline.

My fabric was very old and thin so, the pen marks did most of the guiding for me.

Step 4: Outline your trace marks with your pen. (No, you don’t need to make it perfect, the glitter will cover up the imperfections)

This is when it got a little tricky for me. At first I was using a paint brush, then I tried to smudge it a little with my fingers…etc. I finally settled on using the tip of a mechanical pencil I had lying around. You could also use a bobby pin or paper clip.

Either way, you will need a small point for the next step…..

Step 5: Take your mod podge in small dollops in the largest point of each letter and smooth it out making sure to keep the shape of the font. It’s ok to go outside of the lines a bit, you can fix that later.

Step 6: Cover each letter liberally with glitter. It’s best to do one letter at a time, you don’t want the mod podge to dry without getting the glitter on.

Glue, Glitter,Glue,Glitter and so on….

Step 7: Shake the access glitter off to show your glitter words. Clean up any access glue or glitter that is out-of-place before it dries.

Now you can see it’s starting to take shape!

I let the mod podge under the glitter dry completely before moving on to the next step.

Step 7: Cover each glitter letter with mod podge to seal and let it dry overnight.

And viola! Pretty isn’t it?

Extra tips: *If you need to wash your pillowcase make sure to do it by hand, or better yet, only spot clean it.

*If there are some spots of glue outside of the lines where you don’t want it. Use a Q-tip with some hot water to dampen the spot really well. After letting is sit for a minute use some rubbing alcohol to rub it off!

It’s a perfect craft to add a romantic touch to your home for Valentine’s Day! The whole project only took me a few hours to do! Hope you make one too!

For the love of Pizza (Low Cal Style)

10 Jul

I’ve recently been coming up with a bunch of recipes that are low cal and mimic my favorite foods. Pizza being in my top five; I couldn’t imagine living life without its cheesy goodness! The photo above is the finished product of one of my favorite’s, BBQ chicken pizza. Because I can only have 1200 Calories per day I count everything on and these recipes are 400 calories or under! The best thing about it is that pizza possibilities are endless and if you copy the secrets to making it low cal ANY pizza you can think up will be under 400 Calories!

  • Make sure you have low-fat, whole wheat tortilla shells. I used whole wheat medium-sized tortillas and they are 130 Calories each but you can find tortillas that are even lower calorie than that. I started making these healthy pizza’s on English muffins (same calorie count as a tortilla) but my friend told me about the tortilla idea and i never went back! Plus, I like eating English Muffins for breakfast not lunch/dinner.
  • Cover your tortilla with a tablespoon of sauce. Depending on what kind of pizza you are making a tablespoon of sauce can range between 40 calories to about 5 calories! The BBQ sauce I used for my BBQ chicken pizza was 30 calories (per tablespoon) and the marinara sauce I use for the pepperoni pizza was only 10 calories. Spread the sauce over the tortilla with your measuring spoon like this…..

this is the BBQ Chicken pizza in the making….one for me, one for my hubby.

  • Next add your toppings but this is where you need to make sure you measure! A 4 oz piece of chicken is 200 calories or more so that alone can make this meal go overboard! I had some left over chicken that I chopped up into really small bites. I measured mine in about 1/2 a cup and put the rest on my hubbies pizza (cause he’s tall and skinny and doesn’t need to count calories ::sigh::). Next I added the cheese which is low-fat skim mozzarella. Use 1/4 of a cup at 80 calories.

The blurred one in the back is my husbands which has more than twice the toppings of my delicious and healthy one in front!

  • Bake for about 7 minutes at 400 degrees until you can feel the edges are crispy!

I cut mine into 8 mini slices and it’s just perfect! The BBQ Chicken one is only 370 Calories but I’ve also made a Pepperoni (Turkey pepperoni) pizza that is only 270 Calories!

Considering that a single slice of delivery pizza is an average of 280 Calories I’d say go for this if you are having a pizza craving and live without the guilt of ruining your whole day! I promise it’s MEAL sized not snack size!

Hasta Manana!!

Love ya,

I miss you weekend…come back to me.

7 Jul

What an awesome weekend. After some nice hot coffee, playtime with hubby and littles early on Saturday morning it was off to Walmart.  Walmart has a way of filling my cart with unneeded (but impulsively wanted) junk and by the time I escaped I was out a hundred bucks! I just wanted some damn chicken!!

I grilled up some delicious  buffalo chicken for Wes (one of his favs) and we had good grub and watched the  UFC fight!

Go Silva!!! BTW, what was the deal with Forrest walking out of the octagon and then coming back and interviewing Tito like that? I guess he thought he was going to automatically lose the fight cause it was Tito’s last fight and didn’t want to take his glory…….unsportsmanlike in my opinion.

Started out on Sunday working on my green thumb which, currently isn’t green at all but it’s getting there. I have some potted plants that I bought and never replanted them, so they were sulking in sadness. After, re-potting them they looked a little happier, they had more space and some yummy soil to hang out in. I met a little friend too…

named him George, He looks like a George doesn’t he….

Wes and I took little butt butt to the Oceanside Pier in the afternoon….

I can’t wait for him to be big enough to actually enjoy the beach! We stayed for hours and I got a little pink (Ohhh yeahhh), the joys of having untannable Irish skin! To end our beach day I cheated on my diet and had some ice cream (It was worth every single fattening calorie).

Oh weekend, why do you have to leave so fast? Next time, stick around a little longer! I kinda like you.

Love ya!

Christine Kay
